Tannins
Tannins are astringent (draw or constrict tissues), bitter tasting plant poly-phenols
(long chain acids). Tannins bind to make proteins. There are two types of tannins:
Hydrolyzable and Condensed Tannins. Tannins are thought to have a calming effect
on the Human Central Nervous System and can counteract the stimulating effect
of coffee.
